Simplify apricot chicken by creating a delicious tray bake with chicken, apricot, pumpkin, and green beans.
Ingredients:
  • 825g can apricot halves in syrup
  • 110g marmalade
  • 40.00 ml kecap manis
  • 1.4kg chicken pieces on the bone
  • 1 red onion, cut into wedges
  • 1/4 Kent pumpkin, seeded, cut into wedges
  • 200g green beans, halved lengthways
  • 40.00 ml flaked almonds, toasted
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Preheat the oven to 220°C, then line a large deep baking tray with baking paper before draining the apricots and setting aside 2 tablespoons of the syrup.
  • In a large bowl, mix the marmalade, kecap manis, and reserved apricot syrup. Season to taste. Set aside 2 tablespoons of the marmalade mixture. Coat the chicken with the remaining marmalade mixture. Arrange the chicken, onion, pumpkin, and apricot in a single layer on the lined tray.
  • While roasting, generously brush the chicken twice with the flavorful reserved marmalade mixture. It should take about 35 minutes for the chicken to turn golden brown and cook through. Add the beans to the same tray during the last 5 minutes of cooking for a perfect finish.
  • Garnish the chicken with almonds and parsley before serving.
