Whip up a crowd-pleasing, low-fat herb-crusted pork cutlets for a simple and delicious family dinner.
Ingredients:
  • 9.20 gm olive oil
  • 4 (125g each) pork cutlets, trimmed
  • 62.50 ml apricot jam
  • 165.00 ml fresh multigrain breadcrumbs
  • 62.50 ml fresh flat-leaf parsley leaves, chopped
  • 127.50 gm salt reduced chicken style liquid stock
  • 4 (85g each) corn cobettes, steamed, to serve
Instructions:
  • Preheat your oven to 190°C. In a large non-stick frying pan over medium-high heat, heat oil. Brown the pork on each side for 1 to 2 minutes. Transfer the pork to an ovenproof dish in a single layer.
  • Spread a layer of jam on top of the pork. Mix breadcrumbs and parsley in a small bowl, then sprinkle over the jam. Pour the stock into the bottom of the dish.
  • Bake without cover for 8-10 minutes until pork is fully cooked, breadcrumbs are golden. Drizzle with pan juices and serve with corn.
