Authentic Australian Anzac biscuits with oats, coconut, and dried apricots, quick and easy to bake.
Ingredients:
  • 0.5 cup margarine
  • 3 tablespoons margarine
  • 2 tablespoons golden syrup
  • 2 teaspoons boiling water
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup raw sugar
  • 0.5 cup dried shredded coconut
  • 0.5 cup diced dried apricots
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a baking sheet.
  • In a microwave-safe bowl, melt 1/2 cup plus 3 tablespoons of margarine with golden syrup for 30 seconds to 1 minute.
  • Combine boiling water and baking soda in a small bowl until the baking soda is fully dissolved, then mix it into the margarine mixture.
  • Combine oats, flour, sugar, coconut, and apricots in a large bowl. Stir in water and margarine mixture until dough forms.
  • Shape the dough into small balls and place them on a baking sheet, gently pressing them down to flatten.
  • Bake in the preheated oven until beautifully golden, for around 15 minutes.
