Fill delicate crepes with luscious apricot jam for a delectable sweet treat.
Ingredients:
  • 3 eggs
  • 70.95 gm caster sugar
  • 500.00 ml plain flour
  • 515.00 gm milk
  • 1 large orange, juiced
  • 1 lemon, rind finely grated
  • 30.00 ml vanilla sugar
  • 56.88 gm olive oil
  • 125.00 ml apricot jam
Instructions:
  • Beat eggs and caster sugar together using an electric mixer until combined. Gradually add 1/2 cup flour, beating well after each addition. Slowly mix in the remaining 1 1/2 cups flour and milk until batter is smooth. Reduce speed to medium-low, then add orange juice, cold water, lemon rind, vanilla sugar, and a pinch of salt. Beat until batter is smooth.
  • Preheat an 18cm crepe pan/frying pan over medium heat. Lightly brush pan with oil. Pour in 2 1/2 tablespoons of batter, swirling to cover the base. Cook for 1-2 minutes until golden, then flip and cook for another 30 seconds. Transfer to a plate and repeat with the rest of the batter, greasing the pan as needed.
  • Spread a luscious teaspoon of jam over each delicate crepe. Roll them up tightly for the perfect bite. Layer these delightful creations on a serving platter and sprinkle with a touch of caster sugar. Serve and indulge in a heavenly treat.
