Decadent apricot and lentil soup infused with savory chicken broth, tomatoes, and thyme.
Ingredients:
  • 0.33333298563957 cup dried apricots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 5 cups chicken stock
  • 1.5 cups red lentils
  • 3 roma (plum) tomatoes - peeled, seeded and chopped
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon dried thyme
  • salt to taste
  • 2 tablespoons fresh lemon juice
Instructions:
  • In a sizzling pan, cook apricots, onion, and garlic in olive oil for 5 minutes. Pour in chicken stock and lentils, then let it come to a boil. Lower the heat and let it simmer for 30 minutes.
  • Combine tomatoes in the pot and generously season with cumin, thyme, salt, and pepper. Allow to simmer for 10 minutes.
  • Add freshly squeezed, tangy lemon juice and blend half of the soup until smooth in a blender. Return the purée to the pot and enjoy your delicious creation.
