Delicious apricot muffins with buttermilk and dried fruit - moist, chewy, and satisfying. Ideal for breakfast, tea, or a quick snack!
Ingredients:
  • 1 cup chopped dried apricots
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 1 teaspoon baking soda
  • 0.25 cup melted butter
  • 0.25 cup vegetable oil
  • 1 cup buttermilk
  • 1 egg
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a 12-cup muffin pan with liners or by greasing. In a small bowl, soak apricots in 1 cup of boiling water for 5 minutes.
  • Combine flour, sugar, baking soda, and salt in a medium bowl. In another bowl, mix melted butter, oil, buttermilk, and egg. Gently blend wet ingredients into dry until just combined; some lumps are okay. Drain apricots and fold into batter, then spoon into muffin cups.
  • Bake in the oven until the top springs back when lightly pressed, roughly 15 minutes. Allow it to cool in the pan on a wire rack.
