Apricot oat muffins - a delightful blend of sweet and hearty flavors.
Ingredients:
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/2 cup quick-cooking or old-fashioned oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/3 cup milk
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1/3 cup finely chopped dried apricots
  • 1 tablespoon quick-cooking or old-fashioned oats, if desired
Instructions:
  • Preheat oven to 400°F. Grease only the bottoms of 6 regular-size muffin cups with shortening, cooking spray, or line with paper baking cups.
  • Combine flour, 1/2 cup oats, baking powder, and salt in a medium bowl. In a separate small bowl, whisk together brown sugar, milk, oil, vanilla, and egg until well blended. Gently mix milk mixture into flour mixture until just moistened. Fold in apricots and evenly distribute the batter among muffin cups. Sprinkle each muffin with around 1/2 teaspoon oats for a delightful crunch.
  • Bake for 23-25 minutes or until a toothpick comes out clean when inserted in the center. Allow the dish to cool in the pan before transferring it to a cooling rack. Serve either warm or at room temperature.
