Nutty oatmeal apricot squares: a delightful addition to any summer picnic!
Ingredients:
  • cooking spray
  • 0.5 cup pecan halves
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup chilled unsalted butter, cut into cubes
  • 0.75 cup apricot preserves
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, if using Celsius). Grease an 8-inch square baking dish with cooking spray for easy release of the dish later.
  • In a food processor, pulse pecans until they are coarsely chopped (about 3 to 5 pulses). Then add oats, flour, brown sugar, cinnamon, baking soda, and salt, and pulse 3 to 4 times to combine.
  • Distribute butter cubes evenly over the flour-oat mixture. Pulse until butter is the size of small peas, about 3 to 5 pulses.
  • Press down half of the oat mixture onto the bottom of the baking dish gently. Spread apricot preserves over oat mixture, leaving a 1/4-inch border. Finally, add the remaining oat mixture on top and press down gently.
  • Bake until golden brown in a preheated oven for 35 to 40 minutes. Allow to cool before slicing.
