Nutty oatmeal lace cookies filled with rich Nutella® for a crispy delight.
Ingredients:
  • 1 cup butter, melted
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 2.5 cups quick-cooking oats
  • 1 cup ground pecans
  • 1 teaspoon baking powder
  • 1 (13 ounce) jar chocolate-hazelnut spread (such as Nutella®)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with silicone baking mats or shiny side down aluminum foil.
  • In a large bowl, use an electric mixer to blend melted butter, white sugar, and brown sugar until smooth. Add eggs one at a time, mixing well after each addition, then beat in vanilla extract. Fold in oats, pecans, and baking powder until combined.
  • Scoop 1 teaspoon of batter onto the prepared sheets, making sure to space them 3 inches apart; the batter will spread out thinly as it bakes.
  • Place in the preheated oven and bake until edges just start to brown, 6 to 8 minutes. Leave the cookies on the baking sheets to finish baking as they cool and harden. Allow to cool completely on the sheets for at least 10 minutes before removing.
  • Select 2 equally sized cookies. Gently spread a thin layer of chocolate-hazelnut spread on one cookie and place another on top to create a sandwich. Repeat with the remaining cookies until all are paired and filled.
