Chocolate Drizzled Oatmeal Lace Cookies

Irresistible chocolate-drizzled oatmeal lace cookies - crispy, chewy, and only 90 calories each.
Ingredients:
  • 1/2 cup butter, cut into 1-inch pieces
  • 1 cup packed brown sugar
  • 1 1/2 cups old-fashioned oats
  • 1/4 cup sliced almonds, chopped
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla
  • 1 egg white, slightly beaten
  • 1/4 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350°F and line your cookie sheets with parchment paper for easy clean-up.
  • In a small saucepan, melt butter with brown sugar over gentle heat for 3 to 5 minutes, stirring constantly until smooth and velvety.
  • Pour the mixture into a medium bowl. Add oats, almonds, flour, salt, and vanilla; mix well. Allow it to cool for 5 minutes, then thoroughly combine with the egg white.
  • Spoon tablespoonfuls of mixture onto a cookie sheet, leaving 2 1/2 inches of space between each. Use a greased spoon to flatten each mound into a 2 1/2-inch circle, reapplying spray as needed to avoid sticking.
  • Bake until golden brown and crispy on the edges, for 9-11 minutes. Let cool on the cookie sheet for about 3 minutes until firm. Gently remove with a thin metal spatula and transfer to a cooling rack to cool completely. Repeat with the rest of the cookies.
  • Microwave chocolate chips in a small bowl in 15-second intervals until melted and smooth. Transfer to a plastic bag, cut off a small corner, drizzle on top of cookies. Let cool for 1 hour until chocolate is set. Store in a sealed container at room temperature.
