Decadent peanut butter oatmeal cookies drizzled with chocolate frosting. Simple and irresistible!
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup white sugar
  • 0.75 cup peanut butter
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups rolled oats
  • 2 cups semisweet chocolate chips
  • 2 tablespoons peanut butter
  • 0.5 cup confectioners' sugar
  • 2 tablespoons evaporated milk
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) while you generously grease a 10x15 inch jellyroll pan.
  • In a large bowl, whip together butter, white sugar, and 3/4 cup peanut butter until smooth. Add eggs one at a time, then mix in the vanilla. Fold in flour, baking soda, and salt until incorporated into the peanut butter mixture. Gently blend in oats until evenly mixed. Press the dough evenly into the pan.
  • Bake in the preheated oven for 10-12 minutes. After removing from the oven, evenly sprinkle chocolate chips over the top. Return to the oven for an additional 2 minutes until chocolate chips are shiny. Smooth out the melted chocolate chips and set aside to cool. In a small bowl, mix remaining peanut butter, confectioners' sugar, and evaporated milk until smooth. Spread this mixture over the cooled chocolate layer. Finally, cut into bars and enjoy.
