Elevate oatmeal cookies with tangy dried apricots for a modern twist.
Ingredients:
  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon or cardamom
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 3 cups quick-cooking oats
  • 1 cup Gold Medal™ all-purpose flour
  • 3/4 cup chopped dried apricots
  • 1/2 cup finely chopped pecans
Instructions:
  • Preheat the oven to 375°F. In a large bowl, cream all ingredients except oats, flour, apricots, and pecans with an electric mixer on medium speed until smooth, or mix with a spoon, then fold in the oats, flour, apricots, and pecans.
  • Scoop rounded teaspoonfuls of dough onto a non-greased cookie sheet, spacing them 2 inches apart.
  • Bake cookies for 8 to 10 minutes until the edges are golden brown and the centers are still soft. Let them cool for 1 to 2 minutes, then transfer to a wire rack.
