Delicious oatmeal apricot squares with almond topping and luscious apricot jam filling.
Ingredients:
  • cooking spray
  • 1 cup all-purpose flour, or more as needed
  • 1 cup quick-cooking oats
  • 0.5 cup brown sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup cold unsalted butter, cubed
  • 1 large egg, beaten
  • 0.5 teaspoon almond extract
  • 0.75 cup apricot preserves
  • 0.25 cup sliced almonds
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease an 8-inch square baking dish with cooking spray.
  • In a large bowl, mix together flour, oats, brown sugar, baking powder, and salt. Add butter and blend until mixture forms coarse crumbs.
  • Stir almond extract into the beaten egg and combine with the crumb mixture.
  • First, layer half of the delicious crumb mixture into the baking dish, followed by a generous spread of apricot preserves. Add the rest of the crumbs on top, pressing gently. Finish with a sprinkle of almonds for the perfect touch.
  • Bake until beautifully golden, approximately 30 minutes in the preheated oven.
  • After baking, allow the dish to cool on a wire rack and then slice into squares.
