Delicious buttery oatmeal cookies with versatile dried fruit options like cherries, raisins, cranberries, blueberries, or apricots. For a luxurious twist, try chocolate chips and nuts instead of fruit.
Ingredients:
  • 1.25 cups butter or margarine, softened
  • 1.25 cups brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 3 cups quick cooking oats
  • 1 cup dried cranberries, or other dried fruit
Instructions:
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whip together butter and sugar until fluffy. Add the egg and vanilla, mix well. Combine flour, baking soda, salt, cinnamon, and nutmeg, then gradually incorporate into the mixture. Fold in quick oats and dried fruit. Spoon rounded dough onto the baking sheet.
  • Bake the cookies in the preheated oven for 8 to 10 minutes. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
