Elevate oatmeal cookies with tropical vibes: macadamia nuts, coconut, and dried fruits.
Ingredients:
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup butter, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 1 cup coconut
  • 1 (3.25-oz.) jar macadamia nuts, coarsely chopped (about 2/3 cup)
  • 1 (7-oz.) pkg. diced dried tropical fruits and raisins
Instructions:
  • Preheat the oven to 375°F and grease the cookie sheets. In a large bowl, cream together sugar, brown sugar, and butter until light and fluffy. Mix in vanilla and eggs until well blended. Add flour and baking soda, mix until combined. Stir in oats, coconut, nuts, and dried fruits.
  • Spoon dough onto greased cookie sheets, keeping them 2 inches apart.
  • Bake at 375°F until light golden brown, for about 7 to 10 minutes. Let them cool for a minute, then remove from the cookie sheets.
