Tangy ginger-lime seasoning - ideal pairing for chicken, fish, or pork.
Ingredients:
  • 1 ripe mango, peeled and sliced 1/4 inch thick
  • 2 teaspoons olive oil
  • 0.25 cup finely chopped red onion
  • 2 tablespoons finely chopped red bell pepper
  • 1 jalapeno pepper, finely chopped
  • 1 lime, juiced
  • 2 teaspoons white sugar
  • 0.5 teaspoon ground ginger
Instructions:
  • Preheat the grill to high heat. Coat mango slices with oil in a mixing bowl.
  • Brush grate lightly with oil, then grill mango slices for 4 minutes per side until beautifully browned with charred grill marks.
  • Take the grilled mango off the heat, dice it into small pieces, and place it in a mixing bowl. Mix in diced onion, red pepper, jalapeno pepper, lime juice, salt, sugar, and ginger. Serve at room temperature, chill until serving, or reheat in a nonstick skillet when ready to serve.
