Grilled marinated pork chops topped with a zesty pineapple mango salsa with a kick.
Ingredients:
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 0.25 teaspoon cayenne pepper
  • 1 pod cardamom seeds
  • 0.5 teaspoon water, or as needed
  • 1 teaspoon vegetable oil
  • 0.25 cup rice wine vinegar
  • 0.5 cup sugar
  • 1 mango - peeled, seeded, and chopped
  • 0.5 teaspoon cilantro
  • 1 fresh jalapeno pepper, minced
  • 1.5 cups unsweetened applesauce
  • 3 pineapple rings, chopped
  • 1 pinch white pepper
  • 0.33333334326744 cup soy sauce
  • 0.33333334326744 cup rice wine vinegar
  • 6 pork chops
Instructions:
  • Combine the garlic, chili powder, cayenne, and cardamom seeds in a mortar and pestle and grind into a paste, adding water as needed.
  • In a saucepan over medium heat, warm the oil. Add the spice paste and cook until it starts to bubble, about 30 seconds. Pour in the vinegar and heat for 2 minutes without boiling. Add sugar and stir until dissolved. Incorporate mango, salt, cilantro, lemon juice, and jalapeno. Let it simmer for 20 minutes. Add applesauce and pineapple and simmer for an additional 10 minutes. Season with white pepper. Transfer to a bowl, cover, and refrigerate until needed.
  • Combine 2/3 cup salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a sealed plastic bag, pour marinade over them, seal, and refrigerate for 1 hour.
  • Preheat grill to medium-high heat. Remove marinade from bag and bring to a boil in a saucepan.
  • Prepare the grill by lightly oiling the grate. Place the pork chops on the hot grill and cook for 10 minutes, turning once and basting occasionally with the boiled marinade, until they reach your preferred level of doneness.
  • Gently heat the leftover salsa over medium-low heat. Spoon it over the pork chops before serving.
