Tropical Fruit and Ginger Oatmeal

Yogurt and fruit oatmeal, a delightful breakfast choice.
Ingredients:
  • 2 1/4 cups water
  • 3/4 cup steel-cut oats
  • 2 teaspoons finely chopped gingerroot
  • 1/8 teaspoon salt
  • 1/2 medium banana, mashed
  • 1 container (6 oz) vanilla low-fat yogurt
  • 1 medium mango, seed removed, peeled and chopped (1 cup)
  • 1/2 cup sliced fresh strawberries
  • 2 tablespoons shredded coconut, toasted
  • 2 tablespoons chopped walnuts
Instructions:
  • In a small saucepan, bring water to a boil. Add oats, gingerroot, and salt. Simmer uncovered on low heat for 25 to 30 minutes until oats are tender but slightly chewy. Stir in banana and serve the oatmeal evenly into 4 bowls.
  • Garnish each portion with a dollop of creamy yogurt, juicy mango slices, sweet strawberries, shredded coconut, and crunchy walnuts. Serve promptly.
