Pineapple & gingernut parfait

Classic French dessert with a tropical twist of ginger, coconut, and pineapple flavors.
Ingredients:
  • 600ml ctn thickened cream
  • 40.00 gm caster sugar
  • 250ml (1 cup) coconut cream
  • 250g pkt Ginger Nut biscuits, broken
  • 1 (about 1kg) fresh pineapple, peeled, cored, cut into 1cm pieces
Instructions:
  • Whip cream and sugar in a bowl with an electric beater until stiff peaks form, then mix in coconut cream until fully combined.
  • Pulse the biscuits in a food processor until coarsely crushed, setting aside 2 tablespoons. Layer half of the crushed biscuits in eight 310ml (1 1/4-cup) capacity serving glasses. Follow with half of the coconut cream mixture and half of the pineapple. Repeat layering with the remaining coconut mixture, crushed biscuits, and pineapple. Finish by sprinkling the reserved crushed biscuits on top. Optionally, garnish with fresh pineapple leaves for decoration.
