Experience a tropical twist with pineapple and coconut baked oatmeal for a delightful morning meal.
Ingredients:
  • 2 cups old-fashioned oats
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 2 large eggs, lightly beaten
  • 0.5 cup light coconut milk
  • 0.33333334326744 cup melted butter
  • 0.33333334326744 cup low-fat vanilla Greek yogurt
  • 0.25 cup honey
  • 1 (8 ounce) can crushed pineapple, drained
  • 0.5 cup shredded coconut
Instructions:
  • Preheat your oven to 350°F (175°C) and generously coat an 8-inch square dish with cooking spray.
  • In a large bowl, mix together oats, baking powder, salt, and baking soda.
  • In a separate bowl, combine eggs, coconut milk, butter, yogurt, honey, and vanilla extract. Pour this mixture over the oats and mix until fully combined. Gently fold in the pineapple and coconut, then transfer everything to the baking dish.
  • Bake at the set oven temperature until the oatmeal sets but remains moist, about 25 to 30 minutes. Remove from oven and allow to cool for 5 minutes before serving.
