Pineapple Pie I

Sweetened coconut, eggs, flour, melted butter, and crushed pineapple mixed, poured into pastry shell, baked, cooled, topped with whipped cream and toasted coconut. Delicious creamy pie!
Ingredients:
  • 1 (9 inch) deep dish pie crust
  • 1 cup white sugar
  • 1 tablespoon all-purpose flour
  • 0.75 cup flaked coconut
  • 0.75 cup crushed pineapple, drained
  • 0.25 cup butter, melted
Instructions:
  • Combine sugar and flour in a small bowl, then incorporate the coconut.
  • In a large bowl, gently beat the eggs. Stir in the pineapple, followed by the coconut mixture. Add the melted butter and mix thoroughly. Pour the filling into the deep dish pie crust.
  • Bake at 350°F (175°C) for 45-60 minutes until golden brown.
