Indulge in a luscious pineapple pie with sweet crushed pineapple filling thickened with a zesty lemon and cornstarch mixture, all enveloped in a golden double crust.
Ingredients:
  • 1 (20 ounce) can crushed pineapple with juice
  • 0.75 cup white sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 (14.1 ounce) package double-crust pie pastry, thawed
  • 2 tablespoons milk
  • 1 tablespoon white sugar
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a medium saucepan, mix crushed pineapple with its juice, sugar, cornstarch, and lemon juice. Cook and stir over medium heat until thickened, then boil for 1 minute. Let the filling cool slightly.
  • Prepare a 9-inch pie dish with one crust, add the filling, top with the second crust, seal and flute the edges. Make steam vents, brush with milk, and sprinkle with sugar before baking.
  • Bake until golden brown in the preheated oven for approximately 35 minutes. Enjoy chilled or at room temperature.
