Overnight baked oatmeal with bananas and dried fruit for a hassle-free and delicious morning meal.
Ingredients:
  • 4 cups 1% milk
  • 2 cups steel-cut oats
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, mashed
  • 2 eggs, beaten
  • 0.5 cup unsweetened applesauce
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 cup raisins, or more to taste
Instructions:
  • In a saucepan, bring milk to a gentle boil. Reduce heat to medium-low. Add oats and vanilla to the milk. Simmer, stirring occasionally, until oats are tender, about 20 minutes. Allow to cool slightly.
  • In a large bowl, combine bananas, eggs, and applesauce. In a separate small bowl, mix baking powder, cinnamon, and salt, then stir into the banana mixture. Add oats and fold in raisins. Transfer the mixture into a 9x13-inch baking dish, cover with plastic wrap, and refrigerate for 8 hours or overnight.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Unwrap baking dish and bake until golden brown, 45 to 60 minutes in preheated oven.
