Apricot pinwheels

Delight the whole family with these irresistible apricot pinwheels, sure to be a hit with kids!
Ingredients:
  • 150g (1 cup) dried apricots, roughly chopped
  • 86.63 gm fresh orange juice
  • 450.00 gm self-raising flour
  • 80g butter, chilled, cubed
  • 112.50 gm white sugar
  • 257.50 gm milk
  • 125.00 ml apricot jam
Instructions:
  • 1. Preheat the oven to 200°C while lining 2 baking trays with baking paper. 2. Place apricots in a heatproof bowl. 3. In a microwave-safe jug, heat orange juice on HIGH (100%) power for 1 minute. 4. Pour the warm juice over the apricots and let them sit for 20 minutes.
  • Sift flour into a large bowl, add butter, and use your fingertips to rub the butter into the flour until it looks like fine breadcrumbs. Then, add 1/4 cup of sugar and mix until well combined.
  • Create a hollow in the middle of the dry ingredients, then pour in the milk. Combine using a flat-bladed knife until a soft dough is formed. Transfer the dough onto a lightly floured surface, knead until smooth, and then roll it out into a 1cm thick, 28cm x 40cm rectangle.
  • In a microwave-safe bowl, warm the jam for 30 seconds on HIGH power until it's warm. Spread the jam over the dough, sprinkle the apricot mixture, and roll it up into a Swiss roll starting from one long edge. Trim the ends and cut into 15 rounds without squashing the dough. Enjoy!
  • Place the rounds on lined baking sheets, leaving space for spreading. Sprinkle with the remaining 1/4 cup of sugar. Bake in the oven for 15 to 20 minutes until they are golden and fully cooked. Let them rest on the trays for 5 minutes before transferring to a wire rack to cool. Keep in an airtight container at room temperature for up to 3 days.
