Delicious apricot salad, perfect for holiday buffets.
Ingredients:
  • 1 (6 ounce) package apricot flavored Jell-O® mix
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup water
  • 2 (4 ounce) jars apricot baby food
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333331346512 cup chopped pecans
  • 1 (8 ounce) container frozen whipped topping, thawed
Instructions:
  • In a small saucepan, mix gelatin, sugar, and water until boiling and dissolved. Take off the heat, then stir in baby food and pineapple with juice. Let it cool for 10 minutes.
  • Mix the cream cheese and sweetened condensed milk in a small bowl until smooth. Pour the mixture into the fruit mixture and whisk together.
  • Mix in pecans and transfer the mixture to a 9x13 inch pan. Chill in the refrigerator until cold. Optionally, add a dollop of thawed whipped topping on top. Sprinkle with more pecans for decoration and cut into squares.
