Irresistibly addictive mini pecan bites with apricot preserves, chocolate chips, and pecans - a perfect dessert finger food.
Ingredients:
  • 1 (1.9 ounce) package mini phyllo tart shells (such as Athens®)
  • 0.25 cup apricot preserves
  • 2 tablespoons mini chocolate chips
  • 0.5 cup chopped pecans
  • 0.25 cup brown sugar
  • 2 tablespoons half-and-half
  • 1 tablespoon honey
  • 0.5 teaspoon rum extract
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper or foil.
  • Arrange the phyllo cups neatly on the baking sheet. Spoon 1/4 teaspoon of apricot preserves into each cup, then sprinkle 1/4 teaspoon of mini chocolate chips on top. Set aside for later.
  • In a small mixing bowl, mix together pecans, brown sugar, half-and-half, honey, and rum extract until well combined. Spoon the pecan mixture evenly into the phyllo cups.
  • Bake until edges are golden brown, approximately 10 minutes. Allow to cool for another 10 minutes before serving.
