Easy Chocolate-Apricot Brownies

Decadent chocolate brownies with a twist - tangy apricot jam adds a unique and irresistible flavor.
Ingredients:
  • cooking spray (such as Pam®)
  • 0.66666668653488 cup vegetable oil
  • 2 eggs
  • 2 (20 ounce) packages double-chocolate brownie mix (such as Ghirardelli®)
  • 1 (16 ounce) jar apricot jam
  • 1 cup chocolate chips
Instructions:
  • - Preheat your oven to a toasty 325 degrees F (165 degrees C), then generously grease a 9x13-inch baking pan with cooking spray.
  • Combine oil, water, and eggs in a bowl, then gently fold in brownie mix until just combined. Transfer 2/3 of the batter into the prepared pan.
  • Place in the hot oven and bake for 25 minutes.
  • Heat apricot jam in a small saucepan over medium-low heat while the brownies are baking.
  • After baking the brownies, scatter chocolate chips on top, then generously spread warm jam over. Dollop the remaining brownie batter on the jam-covered surface.
  • Return to the oven and bake for an extra 20-25 minutes until the edges are dry but the brownies still appear slightly underdone. Remove from the oven and let them cool.
