Chocolate and apricot biscotti

Delicious and crisp biscotti, perfect for Christmas, stay fresh in an airtight container for a week. Enjoy with coffee.
Ingredients:
  • 200g plain flour
  • 25g cocoa powder
  • 6.00 gm baking powder
  • 1.25 gm cinnamon
  • 75g dried apricot
  • 75g chopped dark chocolate
  • 110g caster sugar
  • 4 eggs, lightly beaten
Instructions:
  • Preheat your oven to 160°C. Line a baking tray with non-stick baking paper. In a large bowl, combine flour, cocoa, baking powder, and cinnamon. Add apricots, chocolate, sugar, and eggs, then mix until thoroughly combined.
  • On a floured surface, knead the dough until smooth, shape into a log, and place on the tray. Gently flatten the top of the log. Bake for 30 minutes, then let cool briefly after removing from the oven.
  • Slice the log into 1cm-thick pieces, arrange them on the baking tray, and bake for 12-15 minutes until crispy. Enjoy as a delightful snack or post-dinner indulgence.
