Apricot and oat muesli slice

Kid-friendly apricot oat slice topped with dark chocolate drizzle.
Ingredients:
  • 180g rolled oats
  • 75g dried apricot
  • 80g sultana
  • 40g shredded coconut
  • 80g self-raising flour
  • 35g sunflower seeds
  • 185ml honey
  • 125g butter, chopped
  • 55g coconut sugar
  • 50g dark chocolate, melted
Instructions:
  • Preheat the oven to 150C and prepare a 17cm x 27cm slice pan by greasing and lining the base and two long sides with baking paper.
  • In a large bowl, mix together the oats, apricot, sultanas, coconut, flour, and sunflower seeds, creating a well in the center.
  • In a saucepan over medium heat, melt together honey, butter, and sugar until butter melts and sugar dissolves, about 5 minutes. Pour the butter mixture into the oats and stir to combine.
  • Transfer the mixture into the pan and bake for 40 minutes or until golden and firm to the touch. Allow it to cool completely in the pan before serving.
