Irresistible oat cookies with dried apricots, perfect for snack time.
Ingredients:
  • 140g rolled oats
  • 140g brown sugar
  • 200g pkt diced apricots
  • 150g plain flour
  • 53.60 gm golden syrup
  • 3.75 gm bicarbonate of soda
  • 125g butter, melted, cooled
Instructions:
  • Preheat your oven to 160°C and prepare two baking trays with non-stick baking paper.
  • In a bowl, mix rolled oats, sugar, apricots, and flour. In a separate small heatproof bowl, combine golden syrup, bicarbonate of soda, and 1/4 cup (60ml) boiling water. Stir well and let it sit for 2-3 minutes. Then, add the butter and stir until combined.
  • Combine the golden syrup mixture with the dry ingredients until fully mixed. Allow to rest for 10 minutes.
  • Roll spoonfuls of the mixture into balls, ensuring they are evenly spaced 4cm apart on the lined trays. Bake for 15-18 minutes or until beautifully golden, swapping the trays halfway through. Allow the cookies to cool on a wire rack before repeating the process with the rest of the mixture.
