Easy-to-make crunchy fruit and oats bars with whole wheat flour, perfect for a delicious anytime treat.
Ingredients:
  • 1 cup Gold Medal™ whole wheat flour
  • 1/2 cup old-fashioned or quick-cooking oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/4 cup canola oil
  • 1 egg
  • 1/2 cup strawberry preserves
  • 1/2 cup cut-up dried apricots
  • 2 tablespoons oats
  • 2 teaspoons butter
Instructions:
  • Preheat oven to 350°F and generously coat an 8- or 9-inch square pan with cooking spray.
  • Combine flour, 1/2 cup oats, baking powder, baking soda, and salt in a large bowl. In a separate medium bowl, whisk together brown sugar, oil, vanilla, and egg until smooth; then fold into the flour mixture until well combined. Set aside 1/2 cup of the dough for the topping.
  • Press the remaining dough into the pan, using cooking spray or flour on your fingers if sticky. Spread the preserves over the dough and sprinkle with apricots.
  • Combine 2 tablespoons of oats and butter with reserved dough until crumbly. Scatter spoonfuls of oat mixture evenly over apricots.
  • Bake for 25-28 minutes or until the top is golden brown and firm. Allow to cool completely for about 1 hour and 30 minutes. Then, cut into squares by making 4 rows across and 4 rows down.
