Indulge in nutty apricot cranberry pecan bars for a delectable treat.
Ingredients:
  • 1 (15.6-oz.) pkg. cranberry-orange quick bread mix
  • 1/3 cup butter, softened
  • 1 egg, slightly beaten
  • 1 (12-oz.) can apricot filling
  • 1 (3-oz.) pkg. cream cheese, cut into small pieces
  • 1/2 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F and grease a 9-inch square pan. In a large bowl, combine the bread mix and cut in butter using a pastry blender or fork until it resembles coarse crumbs. Add the egg and mix well. Set aside 1 cup of the mixture for topping. Press the rest evenly in the bottom of the greased pan.
  • Combine all filling ingredients in a small bowl, gently stirring to mix without breaking up the cream cheese. Spread the filling evenly over the base. Crumble the reserved mixture with your fingers, and sprinkle it evenly over the filling, pressing lightly.
  • Bake at 350°F for 30-35 minutes until the top is golden brown. Allow to cool for 1 hour until completely cooled, then cut into bars and store in the refrigerator.
