Delicious apricot-cranberry Israeli couscous - a fruity and satisfying side dish for any main course.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 cup Israeli couscous
  • 1 cup low-sodium chicken broth
  • 0.5 cup orange juice
  • 0.33333334326744 cup finely chopped dried apricots
  • 0.25 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon chopped fresh mint
Instructions:
  • In a saucepan over medium heat, melt butter. Add Israeli couscous and sauté until golden brown and toasted, stirring occasionally, for about 4 to 5 minutes.
  • In a saucepan, simmer chicken broth until it boils. Pour over couscous, mix in orange juice, then add apricots, dried cranberries, and ginger. Return to a boil.
  • Lower the heat to medium-low, cover, and let it simmer until all the liquid has been absorbed, which should take about 10 to 11 minutes. Fluff it up with a fork, sprinkle with chopped mint for an extra burst of freshness, and it's ready to be served.
