Skillet beef and rice with toasted pine nuts and lemon juice – a flavorful casserole twist!
Ingredients:
  • 1.5 pounds lean ground beef
  • 3 tablespoons garlic powder
  • 2 tablespoons ground cinnamon
  • 1 tablespoon ground allspice
  • 4 cups water
  • 2 cups long-grain rice
  • 1 teaspoon beef bouillon granules
  • 0.25 cup pine nuts
  • 1 squeeze lemon juice, or to taste
Instructions:
  • Preheat a large skillet over medium heat. Crumble ground beef into the skillet and generously season with garlic powder, ground cinnamon, and allspice. Sauté until beef is fully cooked and crumbly, approximately 10 minutes.
  • Combine water, rice, and beef bouillon with the beef, allowing the flavors to meld together over gentle heat until the rice achieves a soft, fluffy texture, which should take approximately 20 minutes.
  • In a hot skillet, toast pine nuts until golden, about 2 to 4 minutes, swirling occasionally. Sprinkle the toasted pine nuts and lemon juice over the beef and rice mixture.
