Cheesy stuffed Colombian arepas - a versatile and simple homemade treat perfect for breakfast, snack, or dinner.
Ingredients:
  • 2 cups (348g) masarepa
  • 2 teaspoons salt
  • 2 teaspoons sugar, plus more to taste
  • 2 tablespoons (28g) unsalted butter, at room temperature
  • 2 cups (200g) freshly shredded part-skim mozzarella cheese, divided
  • 1/4 cup (50g) whole milk
  • 2 1/2 cups (590g) lukewarm water
  • Nonstick cooking spray, for the skillet
Instructions:
  • Prepare the dough by whisking together masarepa, salt, sugar, butter, and 1 1/2 cups (150g) mozzarella in a large bowl. Slowly mix in the milk and 2 1/2 cups lukewarm water while kneading the dough until combined. Use lukewarm water for a smooth texture, and embrace milk for richness. Embrace Colombian tradition of adding milk for fluffy arepas. You can also use a rubber spatula to mix. Expect a sticky dough consistency.
  • Allow the dough to rest uncovered for approximately 5 minutes to let the starches absorb the moisture. The dough may seem wet at first, but it will dry out as it rests.
  • Portion and shape the dough: Divide the dough into 10 equal parts and form them into balls, keeping your hands slightly damp with cold water to prevent sticking.
  • For a decadent touch, consider adding the remaining 1/2 cup (50g) mozzarella inside. Press the dough ball to create a small well and add a tablespoon of cheese. Seal the dough around it and shape it back into a ball for a cheesy surprise.
  • Flatten the dough balls into round patties less than 1/2 inch thick using your hands or by gently pressing them with a skillet inside a zip top bag or between plastic wrap.
  • Cook the arepas in a generously oiled nonstick skillet over medium-high heat or on a griddle for about 3 minutes on each side until golden brown, ensuring a crispy outside and soft inside. Avoid using butter to cook them, as it may burn fast. For a buttery flavor, cook with oil and add salted butter on top once done. Serve immediately and refrigerate leftovers for 3-5 days.
