Whip up quick and tasty Pork Arepas with cornbread mix, corn, and pulled pork for a speedy 20-minute meal!
Ingredients:
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 1/2 cup shredded Monterey Jack cheese (2 oz)
  • 3 tablespoons butter, melted
  • 3 tablespoons milk
  • 1 can (11 oz) whole kernel sweet corn, drained
  • 1 1/2 cups cooked pulled pork
  • 1/3 cup crumbled queso fresco cheese
  • Chopped fresh cilantro, if desired
  • Lime wedges, if desired
Instructions:
  • Combine the cornbread mix, Monterey Jack cheese, melted butter, and milk in a medium bowl until fully incorporated. Gently fold in 1/3 cup of the corn, saving the rest for later.
  • Preheat a 12-inch heavy skillet or electric griddle over medium-high heat. Shape the cornbread mixture into small 2-inch diameter patties. Cook for 2 to 3 minutes on each side, turning once, until golden brown.
  • Place a delicious arepa on a plate, generously top it with 1/4 cup of tender pulled pork, 3 tablespoons of sweet corn, and a sprinkle of tangy queso fresco. Garnish with fresh cilantro, and serve with a lime wedge.
