Crispy Colombian arepas with melty mozzarella and cornmeal, perfect any time of day.
Ingredients:
  • cooking spray
  • 1 cup warm water
  • 1 cup pre-cooked white cornmeal (such as P.A.N.®)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • 0.5 teaspoon salt, or to taste
Instructions:
  • Combine water, cornmeal, creamy mozzarella cheese, butter, and salt in a large bowl until a soft dough forms. Shape dough into medium orange-sized balls. Place each ball between plastic wrap and roll out to desired thickness.
  • Using the plastic wrap as a guide, cut circles in the dough using the top edge of a cereal bowl or drinking glass. Discard any excess dough scraps and remove the plastic wrap.
  • Prepare a sizzling griddle with a generous coat of cooking spray over medium-high heat. Cook the arepas in batches until they achieve a beautiful golden brown color, around 5 minutes per side. Serve promptly.
