Crispy white corn cakes stuffed with tasty fillings, a must-try recipe from Chef John.
Ingredients:
  • 2.5 cups lukewarm water
  • 2 cups pre-cooked white cornmeal (such as P.A.N.®)
  • 0.25 cup vegetable oil, or as needed
Instructions:
  • Combine water and salt in a medium bowl, then gradually work in cornmeal with your fingers until a soft, moist dough forms.
  • Shape the dough into eight 2-inch diameter balls and flatten each into a 3/8-inch-thick arepa patty.
  • In a large skillet over medium heat, fry the arepas in batches in hot oil until golden brown on each side for 4 to 5 minutes. Then, place the cooked arepas on a paper towel-lined plate to cool and drain excess oil.
  • Using a sharp, thin serrated knife, slice each arepa horizontally halfway through to create a pocket similar to a pita.
