Non-spreading butter cookies with a deliciously simple recipe.
Ingredients:
  • 0.25 cup butter, softened
  • 0.5 cup white sugar
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup arrowroot flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare your baking sheets by greasing them or lining them with parchment paper.
  • Cream together butter and sugar until velvety. Mix in egg and vanilla extract.
  • Mix together the flour, arrowroot flour, baking powder, and salt. Incorporate this mixture into the butter mixture until well combined. Then, divide the dough in half.
  • Roll out half of the dough on a lightly floured surface until it's 1/8 inch thick. Cut it into 2 1/2-inch rounds and place them on a baking sheet, then prick them with a fork. Repeat with the remaining dough.
  • Bake in a preheated oven until the edges turn golden brown, for 8 to 10 minutes; add extra time if rolled thicker.
