Goat and cream cheese-filled artichoke hearts coated in Parmesan and parsley - simple, elegant, and flavorful!
Ingredients:
  • 0.75 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 4 ounces cream cheese, at room temperature
  • 3 ounces goat cheese, at room temperature
  • 2 teaspoons grated lemon zest
  • 1 teaspoon dried tarragon
  • 0.125 teaspoon black pepper
  • 2 (6.5 ounce) jars artichoke hearts, drained and cut into uniform bite size pieces
Instructions:
  • Combine the Parmesan cheese and parsley in a bowl, set aside.
  • Combine cream cheese, goat cheese, lemon zest, tarragon, and pepper in a bowl until smooth. Gently mix in artichoke hearts and coat with Parmesan and parsley.
  • Place the artichoke pieces on a wax paper-lined baking sheet and chill in the refrigerator for 1 hour until firm. Take them out 30 minutes before serving and enjoy slightly chilled.
