30-minute baked chicken artichoke casserole with garlicky mayo & cheese - perfect for a quick & easy weeknight meal.
Ingredients:
  • 1 cup grated Parmesan cheese
  • 1 cup light mayonnaise
  • 1 pinch garlic powder, or to taste
  • 4 (4 ounce) skinless, boneless chicken breast halves
  • 1 (14 ounce) can artichoke hearts, drained
  • 1 (8 ounce) package crimini mushrooms, sliced
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine Parmesan cheese, creamy mayonnaise, and aromatic garlic powder in a bowl, ensuring a thorough blend.
  • Place the chicken breasts in a 9x13-inch baking dish, then layer with artichoke hearts and mushrooms. Spread the flavorful cheese mixture evenly over the artichoke-mushroom layer.
  • Roast in the oven until the chicken is cooked through and its juices run clear, around 30 minutes. Make sure the chicken reaches an internal temperature of at least 165°F (74°C) when checked with an instant-read thermometer.
