Artichokes with prosciutto, feta and mint

Whip up elegant feta, artichoke, and prosciutto bites for a quick and classy appetizer.
Ingredients:
  • 100g goats feta
  • 6 (about 100g) slices prosciutto
  • 1 x 280g btl whole marinated artichokes, drained, halved
  • 62.50 ml firmly packed fresh mint leaves
Instructions:
  • Cut the feta into 3cm-wide slices using a sharp knife. Then cut the prosciutto lengthwise into 1cm-wide slices.
  • Place a slice of feta and a mint leaf on top of each artichoke half.
  • Individually wrap the artichoke stacks with 1 slice of savory prosciutto each and elegantly arrange them on a platter. Finish with a sprinkle of freshly ground pepper before serving.
