Artichokes with Rosemary Sauce

Four ingredients make a stunning side dish perfect for entertaining.
Ingredients:
  • 4 medium artichokes
  • 1/2 cup butter or margarine
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried rosemary leaves, crushed
  • 1 teaspoon lemon juice
Instructions:
  • Prepare the artichokes by removing any discolored or small leaves at the base. Trim stems even with the base, then slice off the top 1 inch straight across and discard. Use scissors to snip off the points of the remaining leaves before rinsing the artichokes with cold water.
  • Place a steamer basket in 1/2 inch of water in a 4-quart Dutch oven, making sure the water does not touch the bottom of the basket. Add the artichokes to the basket, cover tightly, and bring to a boil. Lower the heat and steam for 20 to 25 minutes until the bottoms are tender when pierced with a knife.
  • Melt butter in a pan, then combine with fragrant rosemary and bright lemon juice. Pluck off artichoke leaves individually and dip the base of each leaf into the rosemary mixture.
