Asian brown rice pie

Whip up a quick and delicious rice and vegetable pie side dish.
Ingredients:
  • 200g brown rice
  • 400g Asian Stir-fry Vegetables
  • 9.20 gm oil, plus extra to brush
  • 1 garlic clove, chopped
  • 21.00 gm soy sauce
  • 1 tsp sesame oil
  • 12.00 gm sesame seeds
  • 2 eggs, lightly beaten
  • 40.00 ml chopped fresh coriander
Instructions:
  • Follow the packet instructions to cook the rice for 25 minutes until it's perfectly firm. Allow the rice to cool once cooked.
  • Thinly slice the snow peas and large broccoli pieces. Heat oil in a large frying pan over medium-high heat. Add garlic and stir-fry mix; cook for 4 minutes until soft. Stir in soy sauce and sesame oil. Transfer to a large bowl and let cool slightly.
  • Preheat the oven to 200°C. Grease a 20cm springform pan with oil and coat the base and sides with 3 teaspoons of sesame seeds.
  • Combine rice, eggs, and coriander with the stir-fried vegetables until mixed well. Spread the mixture evenly in the pan, pressing firmly. Sprinkle with the remaining sesame seeds. Bake for 45 minutes until golden. Let sit for 10 minutes, then slice into wedges.
