Kid-friendly vegetable fried rice for a healthy twist on a classic dish.
Ingredients:
  • 9.20 gm vegetable oil
  • 2 tsp grated fresh ginger
  • 4 green shallots, ends trimmed, thinly sliced
  • 1 red capsicum, deseeded, finely chopped
  • 1/4 red cabbage, hard core removed, finely shredded
  • 200g (2 cups) shredded cooked chicken breast
  • 545g (3 cups) cooked brown rice, cooled
  • 21.00 gm salt-reduced soy sauce
  • 20.00 ml kecap manis
  • Green shallot, extra, to serve
  • Chilli sauce, optional, to serve
Instructions:
  • Heat oil in a sizzling hot wok. Stir in ginger and shallot until fragrant, around 1 minute. Toss in capsicum and cabbage, stir until cabbage wilts, for about 1-2 minutes.
  • Add the chicken to the pan and stir-fry it until heated through. Now, toss in the rice, soy sauce, and kecap manis, stir-frying for another 1-2 minutes until the rice is heated through. Serve the delicious dish in serving bowls, garnish with extra shallots, and serve with chili sauce on the side, if desired. Enjoy!
