Vegetarian fried brown rice

Ingredients:
  • 9.20 gm vegetable oil
  • 1 onion, finely chopped
  • 1 red chilli, finely chopped
  • 1 large head broccoli, florets removed
  • 1 large carrot, halved, thinly sliced
  • 150g green beans, roughly chopped
  • 400.00 gm brown basmati rice, cooked
  • 42.00 gm reduced-salt soy sauce or tamari (see note)
Instructions:
  • Whisk eggs until small bubbles form. Heat wok over medium-high heat, add 1 teaspoon of oil, then swirl in eggs to make a delicate omelette. Cook for 1 minute on each side, then transfer to a cutting board and thinly slice.
  • In the wok, combine the rest of the oil, onion, garlic, and chili. Stir-fry for 2 minutes. Turn up the heat to high, then add broccoli, carrot, and beans. Stir-fry for 4 minutes until they are tender and crunchy.
  • Add rice and savory soy sauce to the wok and stir-fry for 3 minutes until warmed. Incorporate the egg, stir well, and serve promptly.
