Flavorful low-calorie vegetarian fried rice.
Ingredients:
  • 2 tsp sesame oil
  • 1/2 Chinese cabbage, shredded
  • 1 carrot, cut into matchsticks
  • 1 small red capsicum, seeds removed, sliced
  • 600.00 gm cooked brown rice
  • 42.00 gm light soy sauce
  • 40.00 ml ketjap manis*, plus extra to drizzle
  • 125.00 ml cashew nuts, lightly toasted
  • 6 spring onions, thinly sliced on the diagonal
Instructions:
  • In a large wok over high heat, sizzle the veggies - cabbage, carrot, and capsicum - for 1-2 minutes, stirring constantly.
  • Stir in the rice and cook for 2 more minutes. Mix in the soy sauce, ketjap manis, cashews, and half of the sliced spring onions, stirring to blend everything together.
  • Sprinkle the remaining onions on top and generously drizzle with additional ketjap manis before serving.
