Healthy Mexican fried rice recipe for two

Vibrant vegetarian dinner for two that's both wholesome and satisfying. (To make it vegan, follow notes.)
Ingredients:
  • 100g (1/2 cup) brown rice
  • 9.20 gm olive oil
  • 1 small brown onion, chopped
  • 1 small red capsicum, deseeded, chopped
  • 1 garlic clove, crushed
  • 1 tsp Mexican chilli powder
  • 1/2 x 400g can black beans, rinsed, drained
  • 1/2 x 300g can corn kernels, drained
  • 21.00 gm fresh lime juice
  • 100g grape tomatoes, chopped
  • 1/4 small red onion, finely chopped
  • 1/2 small avocado, quartered, sliced
  • 60g feta, crumbled
  • Fresh coriander, to serve
  • Lime wedges, to serve
Instructions:
  • Boil rice in a large saucepan for 25 minutes or until tender. Drain, spread on a tray, and refrigerate uncovered for at least 1 hour.
  • 1. Heat oil in a large frying pan over medium heat. Cook onion and capsicum for 5 minutes until soft. Stir in garlic and chilli powder, cook for 30 seconds until aromatic.
  • Stir in the rice for 2 minutes until lightly fried and mixed with the onions. Add the beans and corn, and stir frequently until heated through. Drizzle with lime juice and mix well.
  • Mix together the tomatoes and onion, seasoning to your liking. Serve the rice in bowls and garnish with the tomato mixture, avocado, feta, fresh coriander, and lime wedges.
