Mexican-inspired chicken bake: Pan-fried chicken breasts topped with salsa and cheese, baked to perfection.
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 4 ounces shredded Mexican cheese blend
  • 1 cup salsa
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • In a large skillet over medium heat, heat vegetable oil. Season one side of chicken breasts with half of the cumin, half of the garlic powder, salt, and black pepper. Place the chicken seasoned-side down in the hot oil and cook until lightly browned on the bottom, about 4 to 5 minutes.
  • Sprinkle the chicken breasts with the last of the cumin, garlic powder, salt, and black pepper. Flip and cook until the other side is lightly browned, about 4-5 minutes. If the skillet becomes dry, add a splash of salsa juice to prevent burning.
  • Place chicken breasts in a 9-inch square baking dish and top with Mexican cheese blend. Deglaze skillet with extra salsa juice, then pour over chicken. Spoon salsa over cheese.
  • Roast chicken breasts in the oven for 20 to 25 minutes until fully cooked with clear juices and an internal temperature of 165°F (74°C).
