"Simply combine brown rice, feta cheese, and green beans for a mouthwatering vegetarian fried rice."
Ingredients:
  • 2 cups water
  • 1 cup brown rice
  • 3 cups frozen green beans
  • 3 tablespoons olive oil, or more as needed
  • 2 tablespoons crumbled feta cheese, or to taste
  • 1 pinch ground black pepper to taste
Instructions:
  • In a saucepan, bring water and brown rice to a boil. Simmer until the rice is perfectly tender, 15 to 20 minutes. Drain excess water.
  • Set up a steamer in a saucepan with water, just below the steamer. Bring water to a boil, then add green beans, cover, and steam for 2 to 6 minutes until tender.
  • In a large skillet over medium-high heat, sizzle green beans and rice in olive oil until lightly crisp, about 5 to 10 minutes. Mix in feta cheese, drizzle more olive oil, and season generously with black pepper.
